Comfort food can be a tricky task on a grain and diary free diet. So many recipes require a lot of flour or heavy cream. We don’t even have those things in the house. So whats a girl to do when a savory gravy train dinner smothering mashed potatoes is calling your name? Break out this recipe! It is not labor intensive and can be thrown in a crock pot in about 10 MINUTES and forgotten about until the end of the day. Life is busy so you can either pair it with some Cauli rice from the freezer, home made (if you are feeling fancy) OR instant mashed potatoes (for those super rushed nights, we use Bobs Red Mill with a little refined coconut oil and salt, no butter or anything else needed!) - Grass Fed Chuck Roast 2lb fat trimmed and cubed into 1in pieces (stew meat works as well, Conventionally raised beef also works but tends to cook faster so check it after 6hrs)
- 4 Cups of Mushrooms – halved and sliced
- 1 Cup organic chicken or beef broth
- 3/4 Cup diced sweet onion
- 1TBS fresh thyme or 1 tsp dried
- 1tsp salt
- 1/2tsp pepper
- 1TBS Arrowroot powder (reserved for the end)
Add all of your ingredients (except the arrowroot powder) into your crock pot and cook on low for 8hrs.

Just before serving, remove 1 cup of the liquid and about 1/4 cup of the cooked mushrooms and onions. Blend them well with an immersion blender (a regular blender would also work). Mix in 1 Tbs of arrowroot powder and then add the mixture back to the pot. Stir the liquid back until fully incorporated. This step will make the sauce a bit thicker without a starchy consistency.

Serve over mashed potato or caulimash and a side of green veggies.
Note: A simple addition to make this a great dish to serve over noodles and make it more like a Stroganoff would be to add a half cup of sugar free yogurt at the end and stir until well incorporated, then salt to taste.
