Food for a family of 6 is rarely gourmet, especially with food allergies, a toddler, and a picky eater. If you are looking for a kid pleasing dinner, this grain free dairy free mac and cheese is sure to be a crowd favorite pared with some dairy free mac and cheese and a veg. My cashew “cheese” sauce (1 small sweet potato, 1c water, 1/2c soaked cashews, 1/4 cup nutritional yeast, salt to taste (formal recipe to come soon, but you get the idea). The flat iron steaks are one of our kids favorites and my fastest dinners. It’s so tender and is easy to marinade.
Wash and dry a flat iron steak. We get ours from our Butcher Box subscription.
Slice across the grain and then tenderize the meat with a meat tenderizer or something heavy with a flat bottom.
Soak the sliced meat in a ziplock or bowl with:
- 1 Tbs coconut aminos
- 1 Tbs Apple Cider Vinegar (I like the one from Trader joes because its so affordable but any will work, or soy sauce if you eat soy)
- 1 tsp ginger
- a pinch of salt
- pepper to taste (if desired)
In a large skillet preheated to medium high heat, spread the meat slices out flat and let them cook for about 30 seconds per side.
The best part of this dish is that it takes about .2 seconds to cook. I use a cast iron skillet so cleanup is a cinch.
